Oftentimes, colors make your photos look good, but if you want to make your subject pop from the background, you can choose to apply a black and white filter to the background while retaining the subject's original colors. Google offers a handy feature in its Photos app called Color Pop that lets you take photos with the Color Pop effect, but the feature only applies to a handful of photos.

In addition to the Photos app, Google also offers its own Snapseed app on Android. The powerful photo editor offers image enhancements with filters, text effects, sliders, one-touch tools and more. Among the various tools it offers is the ability to create the Color Pop effect, but you should keep in mind that the effect has to be applied manually.
Snapseed doesn't have a dedicated tool to add a pop of color effect. You can do this by applying a black and white filter and selectively removing it from your subject using the Stack Edit tool.
