FF7 Rebirth lag is rarely an issue with your PS5 or your Dualsense controller. It's always your display. The best solution I found was to keep my PS5's resolution static.

If the above doesn't fix it for you, scroll down in the same menu and disable 120Hz Output. Also enable Performance Mode in FF7 Rebirth's settings if you haven't already.
