Yes. Mastodon lets you follow hashtags so that posts with your favorite hashtags appear on your Home timeline on the web client and in the Mastodon app on Android and iOS.
You can follow any hashtag you search for in your instance's Mastodon client. Additionally, any posts from public servers on the platform will be visible in your Home feed, as long as your instance allows interaction with other instances.
