While the Spirit of Eche'ro isn't particularly rare or difficult to obtain, the quest is only available on a rotating schedule every six months, adding a touch of prestige to the spirit elk mount. Additionally, the time-consuming grind associated with the mount discourages players from obtaining it.

Head to Dalaran, located above the Broken Isles. You can use the Dalaran Hearthstone you obtained during the Legion leveling experience to quickly arrive in the city. The Archaeology trainer you need to interact with in Dalaran is in the "Things of the Past" shop in Dalaran's Magus Commerce Exchange. Once inside the building, speak to Dariness the Learned to pick up a quest called "The Right Path." Again, this quest is only available every six months.
