To hide animations or app icons on Dynamic Island, simply swipe horizontally, left, or right on Dynamic Island to hide the activity.
Swipe horizontally again and boom: Live Activity is back. You can tap and hold on the Dynamic Island to open the Live Activity panel, where you can control the view. Tap on the Dynamic Island and the corresponding app will open.
