Baked brie is welcome at all the fancy gatherings, like Christmas or New Year’s Eve, but it’s also not too bougie for the Super Bowl. In fact, it’s not even too bougie for a Thursday afternoon, if you ask me. As the title suggests, baking baked brie seems like a necessary step, but that, my friends, is crap. You can make it quick, easy, and casual for game day by microwaving your brie.

Quickly baked brie in the microwave

While brie en croûte, the kind wrapped in puff pastry, needs time in the oven, not all baked bries are wrapped. They’re simply reheated until they’re hot, melted cheese, and it doesn’t take much to do that. Grab any old brie or camembert and remove all the wooden containers and plastic wrap. Place the brie on a microwave-safe dish or bowl. I like those wide ceramic soup bowls with flat bottoms and high sides, but a plate with a rim works just as well. The idea is to keep the cheese from spilling out onto the table, so stay away from flat surfaces like cheese boards, slates, or rimless chopping boards.

Place the plate or bowl of brie in the microwave and heat for 20 seconds. Test the cheese to see how melted it is by gently poking it with your finger. The cheese will likely still be firm in the center, but will begin to soften around the edges. Microwave for another 20 seconds and check again. Continue heating the cheese until the center feels slightly soft, about a minute and a half.

Microwaves vary slightly and a 13 ounce wheel of cheese will take longer to heat than a 6 ounce wheel, so check frequently to avoid overdoing it. After a minute of heating, I usually start checking the cheese every 10 or 15 seconds until I'm satisfied.
