You can’t just go back to the boss’s spawn after defeating him once and expect him to come back; that would be pointless to the plot. But certain methods and workarounds can be used to rematch bosses.
New Game Plus is the best way to relive all the boss battles you’ve experienced. Once you defeat the last boss and reach your ending, the story ends and you respawn with all bosses replaced. The enemies have increased power in NG+, but you keep your weapons, character level, runes, spells, armor, and other non-quest related items that will help you. However, this isn’t the easiest way to re-beat a boss, as you’ll need to complete the entire game to do so.
After defeating a boss, you can drop your summon sign so that other players can pull you into their game, where you can fight the boss together. This is Elden Ring's co-op feature, allowing you to play with your friends or even random players. Please note: the host does not have to have defeated the boss, you are not guaranteed to be summoned by others, and you cannot enter dungeons.
