You can safely sign out of your PS4 or PS5 account on the console itself, but you can only remove your Roblox access on that device via the Roblox launcher or via the web.
The first thing you need to do is log in to your Roblox account via the Roblox launcher or the official website. You can do this using a mobile phone or a web browser. Once you are on the home page, go to your settings and click on the Security tab. Scroll down to your connected devices, where the PlayStation section will be visible above the Where you are logged in location list.
