Technically, the Apple Watch Series 6 isn’t waterproof. It’s water resistant, and that’s a distinction. Waterproof means it can’t be damaged by water, and the Apple Watch can. Instead, it’s water resistant, which means it’s okay to expose the Apple Watch to water under certain conditions. Those conditions are pretty specific, though.
The Apple Watch Series 6 is rated ISO 22810:2010 for water resistance up to 50 meters. However, Apple warns against wearing it to that depth.
