Originally, I wanted to make Funfetti cookies. They would be shaped like cookies—flaky, tall, and brown—but would feature the flavors and colors of Funfetti cake mix. I wanted to twist a box of Funfetti cake mix and cut it into colorful, flaky cookies. The problem is, you can’t mess with pre-made cake mix. It’s so well designed that you can add almost any (or very little) liquid to the powdered mix and still get an acceptably fluffy cake layer.

Despite this knowledge, I tried it anyway. I cut pieces of cold butter into pieces. I tried different amounts of liquid. The dough always looked promising when it went into the oven, and always came out as a homogeneous layer of cake.

My partner ate a handful of my ruined non-biscuit and basically told me that even if I didn’t buy the Funfetti mix to make biscuits, it’s still cake. I think he meant it as encouragement, but it got me thinking: I didn’t really want to biscuit my Funfetti mix, I wanted to Funfetti my biscuits. Not only does it taste better, it’s a lot easier.
