I’m not trying to start a fight. Graham crackers are the original s’mores vehicle, and they deserve all the melting, marshmallowy action they get. (I do have a problem with their packaging, though. What were they thinking?) But a change of pace every once in a while is exactly how you discover your new favorite flavor combo. Put the grahams on the shelf this summer and use one of these winners to carry your chocolate and charred ‘mallow.

Crunchy, slightly sweet and sometimes oatmeal-y, these are "biscuits" in the British sense of the word, not the fluffy, buttermilk kind. Digestives are round like biscuits, but not as sweet. They usually come in plastic sleeves of 20 or 30 and are the perfect size for a single s'more. I prefer the chocolate-covered ones, which are a bit of a hack in themselves – all you need is a marshmallow. McVitite's plain are classic, but I prefer their oatmeal sister, Hobnobs.
It’s true that there is one small problem with pretzels as s’mores: they have holes in them. But the best view is from above, so put on a shirt that you’re allowed to put chocolate on and enjoy the perfection. You can use hard or soft pretzels for this application; it’s the salt and that unique flavor of the lye wash that make this an irresistible combination. For single bite s’mores, I recommend the square pretzel snaps.
Sweet and salty almost always win. Marshmallows and chocolate have enough sugar, which means a salty cracker balances it all out. Almost any cracker will do, although I wouldn’t recommend a water cracker or one with garlic. Think salt and butter: try Ritz, pretzels, or that delicious green box of temptation, Kellogg’s Club Crackers.
