This type of mustard is one of my favorites, so I had the answer almost immediately. It goes perfectly with steak frites, but you can use it in a salad dressing, marinate with it, or glaze meat or vegetables with it – talk about versatility.

That's right, the answer to three in the July 10 NYT Mini Crossword is DIJON. Dijon mustard (or Moutarde de Dijon in French) is named after the city of Dijon in Burgundy, France. It is traditionally made from brown mustard seeds, white wine, vinegar, water, and salt. It's about a million miles away from the sweet stuff you squirt on your hot dogs.
