These are true one-bite cheeseburgers, with all the benefits of a classic cheeseburger—the flavors, the richness, the accouterments—minus the size. It’s a slider taken to the extreme: super small and without the bun.
I left out the bread because it’s the part that might make you stop and take two or three bites. It’s also the part that fills you up the most, suppressing your appetite before you’ve even tasted the football-shaped Rice Krispies treats. On a regular-sized burger, the bun adds flavor, acts as a vehicle for the filling, and provides a place to put your hands. For this appetizer, use toothpicks or skewers for clean, easy plate-to-mouth delivery. One pound of ground beef, turkey, chicken, or Impossible meat yields 32 mini cheeseburger bites; along with the rest of your snack spread, this is probably enough for eight to 10 guests.
Mix and season your meat of choice as you normally would to make regular sized cheeseburgers. I keep my mix simple with a little Worcestershire sauce, mayonnaise, salt and pepper. If you are adding anything large like onion or apple, chop or microplane them first. The burgers will be small, so large chunks will disrupt the protein structure and may cause them to fall apart. They also take a short time to cook, so large chunks of vegetables may not be cooked through.
