Salty, tangy feta cheese and sweet, floral honey are a classic duo. I first saw this idea pop up on my Instagram feed (apologies, I can’t remember the account and the post got gobbled up by The Void), and the pancake batter-covered block of grilled cheese was so tempting that I was immediately excited about the idea.
The additions are what make these pancakes shine, so you can use any pancake recipe you like: pre-made mix, ready-made, or gluten-free. My only suggestion is to reduce the amount of liquid slightly so that you get a thick batter.
Thin pancake batter will drip out and leave the cheese chunks sticking out. This isn’t the end of the world, but I prefer a thick pancake for the cheese to nestle into. I used a store-bought pancake mix and subtracted ¼ cup of water from their recommended cup of water. Prepare your batter and have it ready by the pancake pan.
