The reason Channing Tatum's Remy Gambit accent sounds so different in Deadpool & Wolverine is because it's an homage to the character's birthplace, New Orleans.
In the Marvel Comics books, Gambit is from New Orleans and of Cajun descent. As such, he communicates in both Cajun English and Louisiana French. Channing Tatum recognized this background and made sure to incorporate these linguistic elements into his portrayal of the character. It's worth noting that Gambit's accent has a strong southern twang, even in his portrayal in X-Men '97, and Tatum certainly kept that in mind.
